A taste of the ancient Samnite civilisation of Italy starring locally-sourced artisanal produce including handmade cheese, truffle salami, yellowbox honey, hazelnuts, foraged forest mushrooms and venison with a surprise local collaboration for dolce at the end.
Showcasing just how similar the produce of the Orange region is to Paolo's home region of Ciociaria, a 'hidden' food and wine region in central Italy with an origin history dating back thousands of years to the Samnites (pre-dating ancient Rome). Traditional and ancient Ciociarian recipes are used with rich history and stories presented for each dish.
