Not one but two Anthonys of note form part of the line-up – Anthony Nguyen is one of the brightest lights on the team at modern-Asian powerhouse Aru, while Anthony Tran, an alumnus of Stokehouse, Vue de Monde, Quay, Aria and Otto, is now working his magic as a member of the crew at brand-new Collins Street new-Nordic sensation Freyja. Nagesh Seethiah has quickly won hearts and minds with his Mauritian cooking at his superb new North Melbourne eatery Manzé, Dutch-born Pt Leo Estate sous chef Pieter Buijsse brings with him a wealth of Michelin-starred experience from Hof Van Cleeve in Belgium, Oud Sluis and De Kromme Watergang in The Netherlands and Pré Catelan and L’Atelier de Joël Robuchon in France, while Giorgia McAllister Forte has arrived as one of the city’s most exciting patissiers, capturing imaginations with her delectable work .
