Discover all there is to know about native Australian produce, including how to cook it with Otao Kitchen in Melbourne. During this interactive and informative class, you will experience the beauty and simplicity of native ingredients and learn the cooking and preparation traditions that have been handed down from generation to generation through songs, stories and beliefs. Class outline includes learn about local and sustainable bush food such as Davidson Plum, Wattleseed or Kakadu Plum. Learn the health benefits and methods for cooking bush foods. Make a three-course menu using local and native ingredients. Enjoy a social cooking experience and explore native herbs and spices. On the menu is Finger lime and gin cocktail, Spiced kangaroo pear and pepper salsa, Beef and mountain pepper dumplings, Native thyme barramundi steamed in banana leaf, sticky rice and cassava, and Kakadu plum and peanut butter fudge.
